Toasted Bagels With Cold Smoked Salmon & Cream Cheese

Growing up on a fish farm was a funny thing to try and explain to people, but one of the real bonuses was all the fish I got to eat. And these smoked salmon toasted bagels are no exception. Not only do they look absolutely delicious, they make a elegant breakfast or quick lunch. And the best part is that they are so simple and quick to make.  

I added chopped parsley to the cream cheese but dill would also be lovely. I also cheated and bought these yummy bagels from Woolworths rather than try to make them myself. The cold smoke salmon I used can also be found at Woolworths. Trust me its worth the splurge. 


Serves 2


2 bagels, toasted
1/3 cup cream cheese
1 tablespoon plain yogurt
1 tablespoon fresh parsley, chopped
Cold Smoke Salmon, 100g (bought at Woolworths)
Thinly sliced cucumber 
Thinly sliced red onion
Black pepper


1. Cut the bagels in half and toast until crunchy. Mix cream cheese, yogurt and parsley together in a small bowl. 

2. Spread the cream cheese over the toasted bagels and garnish with cucumber and red onion.

3. The smoked salmon comes in thin long strips, so either cut in half and place on the bagels or fold the salmon in half and place on the bagels. Garnish with black pepper.

4. Top with the other half of the bagels or serve open style and add more cream cheese and salmon to the other halves.
