Homemade Coconut Milk

Coconut milk is great for using in so many different kinds of ways, whether it be over cereal or added to baked good. Many people believe the myth that making coconut milk at home is a hassle and settle for the store bought kind instead. 

Until now I had only bought tinned coconut milk, but recently I found out that most coconut milk, especially the cheaper brands contain guar gum which is used as a emulsifier, it's also not great for people with sensitive digestive symptoms. Many coconut milk products also contain Bisphenol-A (BPA). (BPA) is used in the lining of many tinned products. It leaches into the tinned food especially those that are acidic or contain salt and fat. So to be on the safe side its better to limit your intake of tinned goods including coconut milk. After making a bottle at home I don't think I'll be rushing to the store to buy some anytime soon. It so easy to make and it's so much cheaper too.  

HOMEMADE COCONUT MILK

Yields 1 litre

Ingredients

1 cup of desiccated coconut
4 cups water

METHOD

1. Heat water in a saucepan on the stove over medium heat. Remove from stove just before it starts boiling.

2. Place coconut in a blender and add the hot water. Blend on high for 2 minutes.

3. Once blended the milk should be a light and frothy. Pour milk through a nut milk bag into a jug (use a sieve and cheesecloth, if you don't have a nut bag).  Let the milk cool before pouring into a clean milk bottle. Store in refrigerator up to 3 to 4 days.


Like I said before coconut milk can be used in various ways. Add it to smoothies, drink it plain, or simply use it as a substitute for normal milk. The possibilities are endless.
