Danielle Walker's Easy Gluten-Free Enchilada Sauce

I finally decided that I would start sharing some healthy recipes here on the blog more often. If you've read my about me page, you'll know that last year I was diagnosed with an autoimmune disease and although its taken many months to get healthy, I honestly find that eating a wholesome healthy diet really helps me. Regardless of whether you're sick or totally healthy, if you stick to a healthy balanced diet, almost everyone in one way or another finds their way to the healthiest version of themselves.

I don't really like to label the diet I follow, although I follow a lot of the paleo diet suggestions. I would suggest that you rather listen to your own body and what it needs or doesn't need. For example paleo followers don't use dairy, whereas I find that I can tolerate dairy products in small quantities. 

The recipes that I share will be a mix of wholesome/paleo/gluten-free etc. Whatever recipes I find help me and that I like, I'll be sharing. 

Now getting to the actual recipe.. I found this one on Danielle Walker's blog, Against All Grain - she's got some great recipes. This enchilada sauce of hers is super easy to make and is really great for adding to all sorts of meals. And the best part is it is healthy.

My only trouble with this recipe was that it was too spicy for me, so next time I will definitely be using less chili powder. Otherwise I really loved it. You can get the recipe here.

Useful Tips:

1. Unless you have a love for very spicy things, use 1 or 2 tablespoons of chili powder rather than a full 3 tablespoons.

2. The original recipe calls for tomato paste, I don't know if her kind of tomato paste is different to ours here, but I was nervous to throw in 200 grams of tomato paste. Instead I used Woolworth's Organic Italian Chopped Tomatoes, and it worked very well.

3. Once I had blended the sauce I found that it was still very runny. I used a bit of cornstarch to thicken it - cornstarch however isn't always gluten-free, so I wouldn't recommend using it too often.
